Banana Bread Granola

I love baking my own granola, especially because it makes my home smell heavenly! Granola basically consists of rolled oats, nuts, and dried fruits. It's coated in syrup and it's then baked. We are free to create our own granola by adding almost any ingredient that we wish chocolate chips, shredded coconut, raisins, dried figs, pumping seeds, sunflower seeds, dried cranberries, dried apples, smashed bananas, cashews, almonds, walnuts, and a long etcetera.  

Rolled oats are high in protein and provide lots of fiber, which is important for good digestion. Dried fruits are an excellent source of vitamins and certain antioxidants. Nuts and seeds are high in magnesium and healthy fats. In short, Granola is a healthy source of fuel for an active lifestyle and it's copiously packed with necessary nutrients for your body.

Banana Bread Granola is one of my favorite granola recipes. It is very easy to bake and it tastes amazing.  

Ingredients 

250g rolled oats 
2 ripe bananas (medium size) 
4tbsp pumping seeds 
100g crushed walnuts 
50g crushed almonds 
100g raisins 
1tbsp cinnamon 
vanilla extract (to taste) 
4tbsp agave syrup 

Directions 

Preheat the oven to 180°C. 

Mash the bananas. I prefer to use a fork to get a thicker paste with small chunks of banana. 

For a proper mix of the ingredients, combine wet and dry ingredients in separate bowls, except for the raisins.  

Incorporate both mixtures in a bowl, and make sure that the entire dry mixture is well soaked in the wet mixture. If needed, add a little bit of water or more agave. 

Spread homogenously the batter onto a baking tray, I recommend using a parchment paper.  

Bake the granola for about 30 minutes, or until it looks well toasted. Stir the batter every 10 minutes in order to break the biggest clusters. 

Remove the granola from the oven and mix in the raisins.  

Let it cool and store in a glass jar for a better preservation. 


Granola is perfect to eat with milk or combined with fruits and yogurt to create a delicious parfait. I personally love to have granola around when exam period draws near, since I love snacking on something crunchy while I'm studying.
